Should é a forma do condicional de shall, enquanto would é a de will. No inglês informal, o "conditional tense" é conjugado inteiramente com would, mas, no inglês mais formal, pode-se usar o auxiliar should na primeira pessoa (I/we) e o auxiliar would nas segundas e terceiras pessoas (you, he/she/it, they). O texto valeu-se do inglês mais formal ao empregar should na primeira pessoa ("I should like..."). Dessa forma, a substituição de should por would não acarretaria uma mudança significativa no texto.

As with shall and will, the use of should and would iesn't always black and white. The default rule is that should is used with first person pronouns ( I and we), as in: I said I should be late, and would is used with second and third persons ( you, he, she, it, they), as in: I wasn't aware that you would be gone.
In everyday speech, though, would is used instead of should in reported speech and conditional clauses: I said I would be late; if we had known, we would have invited her.
In modern usage, should is mostly used when relating to obligation (which would cannot replace), as in: you should go out more, and for emphatic uses, as in: you should have seen their reaction.
Nevertheless, The use of 'I should like' instead of 'I would like' implies a more formal prosody. The phrase should like to/object conveys desire to accomplish to something and it sounds polite: I should like the soup for my starter.
