Should é a forma do condicional de shall, enquanto would é a de will. No inglês informal, o "conditional tense" é conjugado inteiramente com would, mas, no inglês mais formal, pode-se usar o auxiliar should  na primeira pessoa (I/we) e o auxiliar would nas segundas e terceiras pessoas  (you, he/she/it, they). As with shall and will, the use of should and would iesn't always black and white. The default rule is that should is used with first person pronouns ( I and we), as in: I said I should be late, and would is used with second and third persons ( you, he, she, it, they), as in: I wasn't aware that you would be gone.

In everyday speech, though, would is used instead of should in reported speech and conditional clauses: I said I would be late; if we had known, we would have invited her.

In modern usage, should is mostly used when relating to obligation (which would cannot replace), as in: you should go out more, and for emphatic uses, as in: you should have seen their reaction. 

 

Nevertheless,  The use of 'I should like' instead of 'I would like' implies a more formal prosody. The phrase should like to/object conveys desire to accomplish to something and it sounds polite: I should like the soup for my starter.
